One of our favorites this week is the Butternut Squash Tacos…yes, you heard right and roasted butternut squash makes a delicious taco filling! Serve these with the Simple Salsa Fresca, guacamole, or any of your favorite toppings. If you ever get that grilled cheese and tomato soup craving, the Tomato Soup with Barley and White Beans will hit the spot!
