In case you missed it, yesterday was National Wine Day! Pour a glass of your favorite wine while you browse this week’s meal ideas!
Since this weekend marks the unofficial start of summer, we have included a few additional ideas that make great use of in-season ingredients from your local farmers’ markets. Plus, several are perfect for the grill. We can’t quite put into words how amazing the Jamaican Jerk Pork Tenderloin and Grilled Jerk Vegetables are…they are super-easy to prepare and are both incredibly delicious! And, the best part might be transforming the leftover pork into the Tropical Cuban Sandwich!
The Salmon Kabobs are also ideal on the grill and pair perfectly with the creamy dill sauce. The Kung Pao Chicken Lettuce Wraps are excellent for a get-together and provide another delicious way to enjoy kohlrabi. Plus, the Curried Asparagus & Chickpeas is a quick and easy way to enjoy some curry flavors – it’s such a versatile side dish, and would be fantastic as a light dinner or breakfast (we enjoyed it with a poached egg on top!).
While you are at the farmers’ market, pick up some rhubarb and enjoy the Strawberry Rhubarb Crumble – tastes just like something grandma used to make – and healthier!
