What happens when in-season ingredients meet Cinco de Mayo? You get this week’s Eat REAL America meal ideas!
You probably know that Cinco de Mayo is the 5th of May, but what is its significance? It’s a celebration of Mexican culture and heritage and is celebrated primarily in the U.S. In 1862, Mexico won the Battle of Puebla against France. The reason this is a big deal is because France sent a huge army to invade Mexico and, although the Mexicans were the underdog, they won the battle and this unlikely victory is celebrated every 5th of May. Many believe Cinco de Mayo is Mexico’s Independence Day, but that day is actually celebrated on September 16th, which is a much more important holiday in Mexico!
The Slow Cooker Carne Asada Steak will give you mouth-watering, falling-apart steak to turn into tacos, nachos, lettuce wraps, pizza, stuffed sweet potatoes…you name it! If you are grilling this week, the Hawaiian Fajitas are delicious and would go great with a side of Strawberry Guacamole! If you need quick and easy, make sure to try the One-Pan Mexican Quinoa and the Mexican-Inspired Tuna Salad and celebrate Cinco de Mayo in style!
Make the most of your locally-grown produce this week! In many parts of the country, it’s an excellent time for asparagus, carrots, green onions, turnips, radishes, greens, strawberries, rhubarb and so much more! The Spring Onion, Asparagus & Potato Stir Fry and the Spring Vegetable Orzo Salad are both great ideas…springtime on your plate!
After several attempts, we have a winner and think you will love the Chocolate Chip Pecan Blondies! Be prepared, they will disappear quick! More ideas for Mother’s Day coming next week!
