Chocolate Chip Pecan Blondies

Why We Like It


These chewy fudge-like delicious brownies have a secret ingredient...chickpeas!  And, no one will ever know!  Such a great sweet treat with extra nutrients -- be prepared, they will disappear quick!

Preheat the oven to 350 degrees

Blend the Brownies:

  • 1 (15 oz) can chickpeas (rinsed and drained)
  • 1/2 cup old fashioned rolled oats
  • 1/3 cup natural peanut butter (or almond butter)
  • 1/3 cup pure maple syrup (or honey)
  • 2 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt

Add to a food processor or blender and blend until smooth, scraping down the sides as needed.

Add Chocolate Chips:

  • 1/4 cup dark chocolate chips

Add to the food processor or blender with the brownie batter and pulse a few times until combined.

Finish and Bake:

  • 2 Tbsp to 1/4 cup dark chocolate chips
  • 1/4 cup chopped pecans (or your choice of nut, such as walnuts or almonds)

Spoon the brownie batter into a greased 8 inch x 8 inch baking dish.

Top with dark chocolate chips and pecans.

Bake for 23-25 minutes until toothpick inserted in the middle comes out clean.

Serve and Enjoy!

Cut into 16 squares and serve.  Store brownies in a covered container in the refrigerator (Keep in mind, they also freeze great)!

Quick Tips


This recipes uses an 8-inch square baking dish, but doubles easily for a 9×13 inch baking dish.  If you double the recipe, (which we highly recommend!), bake them for about 25-28 minutes.  They turn out best if you don’t overcook them.
