Welcome to Spring 2025!  Yes, despite the weather the past couple of days, it is officially Spring!   And it’s the perfect time to pick up fennel from the farmers’ market or store.  When cooked, it turns tender and sweet – enjoy it in the Sweet Orange Roasted Fennel & Radish Salad (check out this video) and the French-Inspired Fish & Fennel Skillet.

The Citrus Oven Roasted Chicken is so easy to prepare, tastes great and the whole family will love it.  Pair it with the Strawberry Blue Cheese Pecan Salad or the Crunchy Roasted Cabbage Kale Hash and you will have a super satisfying Spring meal!

The Slow Cooker Beef Barbacoa is full of flavor – and the leftovers are fantastic in so many meals, including the Sweet Barbacoa Salad with Cilantro Lime Dressing.  This was inspired by an Eat REAL America member who mentioned a salad she loves at Cafe Rio in Utah.  You could even add some beef to the Mango & Black Bean Stuffed Sweet Potatoes – an absolutely delicious way to enjoy fresh or frozen mango!
