As you might imagine, we are a little (ok, a lot) obsessed with the Farmer’s Market…we absolutely love it! Once you taste the flavor that comes from the fresh produce from the local farms, it becomes addicting! You may even, dare I say, set your alarm on Saturday morning to get up early and get the best produce the farmers bring to the market!
So, what to do with those farm fresh goodies? We have you covered…and our favorite this week…The Grilled Veggie Sandwich! We grill lots of veggies, but there was something about this sandwich that made it especially memorable! We made it for a Saturday lunch and kept talking about how good it was all afternoon – big time winner! We put it on a focaccia bread from a local bakery, but any good bread would work. And don’t forget the goat cheese!
Heirloom tomatoes are starting to appear and they are worth picking up for their incredible flavor – and, of course, to make the Heirloom Tomato Salad! The Farmer’s Market Hash with Kale and Bacon is an easy and delicious way to use whatever veggies you like best! And, you can’t go wrong with the Honey Garlic Chicken or Simple Fish Tacos — they are both great weeknight meals and incredibly good…the kids loved these!
