Why We Like It

This salad is worth a special trip to the farmers' market to pick up some fresh heirloom tomatoes.  And, the basil pesto is a great way to use fresh in-season basil too!  Keeping this one simple allows the flavors of the heirloom tomatoes and basil pesto to really stand out.

Make the Pesto:

  • 2 cups fresh basil leaves
  • 1/2 cup parmesan cheese (shredded or grated)
  • 1/3 to 1/2 cup olive oil
  • 1/4 cup pine nuts (or other nut such as pecans, walnuts, or almonds)
  • 2-3 garlic cloves
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Add everything to a food processor or blender and blend until well combined.  Set aside.

Toast the Seeds (OPTIONAL):

  • 3 Tbsp pepitas (or pumpkin seeds, sunflower seeds, or sliced almonds)

Add to a small dry skillet over medium heat and cook for 3 minutes until lightly browned and fragrant.  Let cool for a few minutes.

Put it all together:

  • 4 medium heirloom tomatoes (cut into large cubes)
  • 2 Tbsp feta cheese

Place tomatoes on a plate and top with a couple to spoonfuls of pesto, pepita seeds, and feta cheese.  Keep in mind, you may not need all of the pesto for this recipe, but it can be used for many other ideas…simply search “pesto” in the search bar!

Pepitas is a Spanish term for pumpkin seeds.  Pepitas can generally be found in grocery stores and specialty nut / seed stores.
