When we started our REAL food journey, we ate and enjoyed all kinds of fruit, but fruit rarely made its way into our meals. We had no idea what we were missing! We now love the amazingly delicious ways to include fresh fruit in our entrees AND sides! The Skillet Pork Chops with Peaches and the Balsamic Watermelon Chicken Salad are both great-tasting proof of that! Watermelons should soon start showing up at local farmers’ markets, so be on the lookout!
The Shrimp Po-Boy Sandwich is one of our daughter’s favorites — this was inspired from a sandwich from a local food truck that was “the best sandwich she has ever eaten!” The Kale and Coconut Veggie Stir Fry and Banh Mi Noodle Bowl will both make dinner on a busy weeknight a little easier and the Summer Vegetable Skillet is so good it could be a meal all by itself! Plus, if you have been looking for an idea what to do with spaghetti squash, the Garlic & Herb Spaghetti Squash is a simple, great-tasting way to enjoy this awesome veggie!
