Did you catch Tuesday’s coaching tip about tomatoes? Now is the perfect time to enjoy those flavor-popping summer tomatoes and this week’s meal ideas are loaded with inspiration!
There are all kinds of summer ingredients in the Cod & Pasta Ratatouille – and you can throw it all on the grill! Fresh off the vine cherry tomatoes are ideal in the Farmers’ Market Greek Lamb Dip! These would both be excellent with the Peach Caprese Salad or the Summer Explosion Salad. If you think fruits and vegetables need to “stay in their own lanes” and can’t be combined in the same dish, we are confident both of these will change your mind!
The Summer Harvest Frittata is also loaded with fresh summer ingredients. Serve it alongside the Watermelon Blueberry Salad. We picked up a watermelon and blueberries at the farmers’ market on Saturday and already devoured them (now we are wishing we would have bought more!).
For a couple of quick and easy meals this week, there is no better time for an EBLT, and the Bruschetta Pizza is a delicious and refreshing meal on a hot summer day!
