Why We Like It

Light, refreshing and we have been told "this is the best cantaloupe salad I have ever had!"  Fresh in-season cantaloupe and tomatoes give this salad over-the-top flavor!

Salt the Tomatoes:

  • 2 lbs tomatoes (cut into bite size pieces, use a variety of types and colors)
  • 1/2 tsp salt

Place tomatoes in a colander over a large bowl.  Sprinkle with salt and toss to combine.  Let sit for 10-15 minutes to concentrate the flavors and release moisture from the tomatoes.  Then, drain the juice and place the tomatoes into the bowl.

Finish the Salad:

  • 1 small cantaloupe (cut into cubes, or scooped with a melon baller)
  • 1 cucumber (chopped)
  • 1/2 red onion (thinly sliced)
  • 1/2 cup fresh basil leaves (chopped)

Add to the bowl with the tomatoes.

Add the Dressing:

  • 1/2 tsp honey (or more to taste)
  • 3 Tbsp olive oil
  • 4 Tbsp white balsamic vinegar
  • 1 Tbsp lime juice (juice from half a large lime)
  • 1/4 tsp black pepper
  • 1/4 tsp salt (OPTIONAL)

Add to a small bowl or mason jar and stir or shake to combine.  Pour over salad and toss to combine.

Serve and Enjoy!

Quick Tips

Don’t skip the “salt the tomatoes” step…it will really intensify the flavor of the tomatoes!

You can use either white balsamic vinegar, or regular balsamic vinegar…just keep in mind if you use regular balsamic it will add a slightly darker tint to your salad.
