Week of July 13, 2020 - Weekly Meal Ideas


Nothing feels more like summer than when tomatoes are starting to show up in full force in our gardens and farmers’ markets!  Take advantage of those fresh tomatoes with the Roasted Ratatouille Pasta, Zoodles Gone Mediterranean and the Cherry Tomato Margherita Pizza.  And, fresh corn on the cob is starting to appear (perfect for the Charred Corn Salad), and melons should be showing up at local farmers’ markets soon, so be on the lookout!

When we started our REAL food journey, we enjoyed all kinds of fruits by themselves, but they rarely made it into our meals.  We had no idea what we were missing!  Occasionally, we will still hear someone say, “I don’t like fruits in my salads”…WHAT?!  All it takes it the right salad to change that perception…and, the Blueberry Apricot Spinach Salad is one that will do just that!  It’s delicious and packed with flavor!  And, it pairs perfectly with the Kiwi-Ginger Grilled Chicken Legs.

We now love the incredibly flavorful ways to include fresh fruit in our entrees, sides AND desserts.  The Grilled Banana Split is one absolutely delicious example!
