An Eat REAL America member recently asked us to re-create one of her favorite hummus varieties she buys at the store, so we are thrilled to share the Sweet and Spicy Sriracha Carrot Hummus! A little sweet, a little spicy, and A LOT of flavor. We hope you love it as much as we do! You might even want to enjoy it with the Thai Curry Roasted Veggies.
FINALLY! Tomatoes are beginning to show up in full force in our gardens and farmers’ markets. Take advantage of fresh summer tomatoes in many of this week’s meal ideas, including the Take Me to Italy Tomato & Garlic Pasta and the Tomato & Basil Bruschetta. Plus, fresh corn on the cob is appearing as well! Go ahead and incorporate both tomatoes and corn into the incredibly delicious Fresh Corn Salad — it goes great with the Lamb Pitas!
For a quick and easy meal, make a batch of the Seasoned Slow Cooker Chicken, and then enjoy it in the Chicken Taco Salad with Cilantro Vinaigrette, which is another fantastic way to enjoy those fresh summer flavors. As is the One Pan Vegetarian Lasagna — we love this time of year!
