Are you feeling a touch of the January blues?  This week’s meal ideas will help boost your mood, along with your immune system.  The Very Veggie Minestrone and Winter Blues Fruit Salad are jam-packed with nutrients, plus they taste amazing!  Add some healthy seafood to your week with the Winter Pan Roasted Honey Mustard Salmon & Veggies…absolutely delicious.  And it would go great with the Smoky Black-Eyed Peas (which might even bring you another dose of good luck)!

The Almond Crusted Pork Tenderloin is super simple to prepare, and the optional raisin topping adds an extra pop of flavor.  It goes perfect with the Stir-Fried Greens with Jalapeno & Ginger.

To make healthy food even more convenient, put the Easy Chicken Bulgogi in your meal plan this week.  You may even want to double the recipe so you can transform the leftovers into the Chicken Bulgogi Breakfast Burritos.  These make an excellent grab-and-go breakfast, and you can even freeze some of them to enjoy later.
