Why We Like It

The nutrient-rich salad is perfect to boost your mood in the dead of winter.  Plus, the fresh fruit gives you that refreshing reminder that Spring will be here again someday soon!

Make the Salad:

  • 6 cups fresh spinach (or greens of your choice)
  • 2 oranges (2 small cutie oranges, or 1 large orange, peeled and segments cut in half)
  • 6-8 strawberries (sliced)
  • 1/2 cup red onion (thinly sliced)
  • 1/4 cup walnuts (chopped)
  • 1 avocado (peeled, pitted and diced)

Add to a large bowl and stir to combine.

Make the Orange Honey Vinaigrette:

  • 2 Tbsp orange juice (juice from one small orange)
  • 1 Tbsp white wine vinegar
  • 2 tsp honey
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 Tbsp olive oil (OPTIONAL)

Add to a small bowl or mason jar and stir or shake to combine.  Pour over the salad and toss to combine.

Serve and Enjoy!

Quick Tips

Optional idea!  We have also served this salad with a minimal amount of crumbled bacon on top (about 2 slices) and it is really delicious either way!
