Week of December 30, 2024 - Weekly Meal Ideas


We hope you all had a blessed Christmas and are starting to get excited for the transition into 2025.  This week’s meal ideas will help you celebrate with the best of them without abandoning your healthy routine!

The Cincinnati Style Chili is perfect to feed a crowd – and everyone can customize it however they like it!  It would go great with the Cinnamon Pumpkin Cornbread or the Roasted Chickpeas & Pear Salad.  Another fun idea is the Loaded Mexican Sweet Potato Fries – set out the toppings and everyone can “make it their own.”  The Seven Layer Dip is loaded with delicious flavors, and the Buffalo Broccoli & Cauliflower Bites is a unique alternative to wings.

If you have spaghetti squash leftover from the chili, you can transform it into the Spaghetti Squash Pancakes.  They are so versatile, and you can make them sweet or savory depending on what you are craving!

Of course, New Year’s Day wouldn’t be complete without black eyed peas…the Black-Eyed Peas & Veggie Curry is easy to prepare and loaded with color and flavor!  It would also be ideal with the Cinnamon Pumpkin Cornbread.
