The Mini Eggplant Pizzas came from an Eat REAL America member request. If you think you don’t like eggplant, prepare to be blown away! And the sides this week are all super-easy, refreshing and loaded with flavor! The Easy Peach Salsa has gotten rave reviews at some recent farmers’ market cooking demos. It would be great to serve at family and friend get-togethers, as well as the Edamame Tomato Basil Salad.
