Summertime Bolognese

Summertime Bolognese

Why We Like It

Fantastic light and refreshing pasta dish!  Bolognese refers to a pasta dish typically made with beef, tomatoes, onions and herbs.  We can't wait to make this is THAT good!  Don't leave out the Greek olives - they add great flavor!

Cook the Pasta:

  • 6 oz whole wheat spaghetti
  • 1/8 tsp salt

Bring a large pot of salted water to a boil.  Add pasta and cook according to package directions for al dente pasta. Drain, saving 1/4 cup of the pasta cooking water, and set aside.

Cook beef:

  • 1 lb lean ground beef

In a large skillet over medium high heat, cook until browned and cooked through.

Cook Veggies and Seasonings:

  • 1 cup zucchini (chopped)
  • 2 tsp date sugar (or sugar)
  • 4 garlic cloves (finely diced, or 1 tsp garlic powder)
  • 1 tsp dried thyme
  • 1/2 tsp crushed red pepper flakes
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Add to the skillet with the cooked beef and cook 5 minutes or until zucchini is slightly tender.

Add more flavor:

  • 1/2 cup dry white wine
  • 1 cup cherry tomatoes (cut in half)
  • 1/2 cup kalamata greek olives (sliced)
  • 2 Tbsp tomato paste (no salt added)
  • 2 Tbsp red wine vinegar
  • 1 Tbsp lemon juice (juice from half of a lemon)

Add white wine to the skillet and stir to deglaze the pan.  Add everything else, including reserved pasta water, stir, and cook for 2 minutes.  Add the cooked pasta to the skillet and toss to combine.


  • 1/4 cup fresh basil leaves (chopped)
  • 1/4 cup parmesan cheese (shredded)

Serve the pasta dish topped with fresh basil and parmesan if desired.

Quick Tips

Al dente means “to the tooth” in Italian.  For best results, cook the pasta until it is tender but firm — no one wants mushy pasta!
