Why are we so passionate about eating in-season? Because eating seasonal produce such as summer squash, zucchini, eggplant, peppers, okra and fresh juicy tomatoes means eating these foods when they are at their best! Then, once you start to feel like you have had enough, you realize September (and Fall!) is right around the corner with winter squash, crisp apples, pumpkin and more! But wait!…we are still trying to squeeze as much out of summer as possible!
If you feel like you are swimming in fresh tomatoes, the Bhindi (Okra) Curry and Herbed Tomato Cod with Capers are the ideal way to use them up! And, the sides this week are quick, easy and incredibly good — pick up cabbage, summer squash, shishito peppers, and sweet potatoes (ideally, from the farmers’ market) and you will be all set to enjoy the Cabbage Summer Squash Pear Salad, Shishito Peppers, and Grilled Sweet Potato Wedges.
We will keep the Hatch Chile ideas coming for at least the next week or two…the Hatch Chile Burger is a favorite!
