Week of August 14, 2023 - Weekly Meal Ideas


Tomatoes, zucchini, watermelon, peaches, cucumbers, peppers, okra, fresh greens and herbs…and so much more!  Take advantage while you can!  So many times, we enjoy meals in the summer and find ourselves saying, “there is no way this would be as flavorful as it is RIGHT NOW!”  That’s the power of fresh, local, in-season ingredients!

Several meal ideas this week are excellent examples…the White Fish Veggie Packets, Summer Peach & Tomato Salad, and the Cucumber & Tomato Salad with Green Goddess Dressing (which would go perfectly with the Greek Goulash) are all incredible with in-season ingredients including fresh juicy tomatoes and fresh herbs!

If you read our coaching tip on Tuesday, you know that this is the perfect time to enjoy Hatch chilies – and the Hatch Chile Burger is a great one!  We also love Shishito (or Padron) Peppers in August – we fell in love with them a few years ago and enjoy them frequently, whether it is on the grill or sautéed in a skillet.  We get to the farmers’ market extra early this time of year to make sure to get some before they are gone!

A couple of other ideas to savor right now are the Balsamic Watermelon Chicken Salad and the Veg Out Flatbread Pizza.  If you have leftover balsamic reduction from last week, you can use it as a delicious topping on both of these!

We bought a spaghetti squash at the market last week.  Over the next few weeks, in-season ingredients will begin to transition…all kinds of inspiration for end of summer and early fall produce are just around the corner!
