Week of April 22, 2024 - Weekly Meal Ideas


Lots to celebrate this week!  Since tomorrow is National Garlic Day, it is the perfect time to enjoy the Garlic Chicken Cacciatore (and an ideal way to use the Seasoned Slow Cooker Chicken).  Try pairing it with the Garlic Lemon Grilled Artichokes (if you are new to fresh artichokes, you can watch this video to see how to prepare them).

April is also National Soy Foods Month!  Tempeh is made from soybeans that have been cooked and lightly fermented and resembles ground turkey when you brown it in the skillet.  We have fallen in love with tempeh — it is so incredibly good combined with veggies and a flavorful sauce in the Szechuan Tempeh Stir Fry!

As we mentioned in our coaching tip on Tuesday, Buddha Bowls are a fantastic way to enjoy a wide variety of plants!  The Korean Beef & Veggie Bowl and the Chermoula-Inspired Roasted Vegetables & Chickpeas are delicious proof of that – they are loaded with flavors and textures, and the leftovers are excellent for lunch the next day!

For a quick and easy meal, the Simple Chickpea Salad Sandwich is refreshing and filling.  And if you like the seasoning Zaatar as much as we do, enjoy it this week in the pita chips to accompany the Springtime Minted Pea Dip and the toppings for the Kale Salad with Spiced Almonds!
