“Out of this world!”  “So delicious!”  “Addicting!”  These are just a few of the comments we have received about one of the sides in this week’s meal ideas…the Roasted Hatch Chile Guacamole!  This is not your ordinary guacamole…adding roasted Hatch Chile peppers sends the flavor over the top — make it at your next family or friend gathering, then stand back and watch it disappear!

Fall-inspired meals definitely shine in the meal ideas this week…the Butternut Squash & Apple Soup is ideal for a crisp fall night, and the Sweet Potato and Black Bean Enchiladas are delicious —  both will have you thinking…I didn’t even miss the meat!

The Brussels Sprouts and Leeks Gratin is crazy-good, while keeping your October Superfood Challenge alive — it’s an excellent example of a side dish that looks fancy but is super-easy to put together!
