Coming in June, our Superfood of the Month is (drumroll please)…beets! For those of you who think you don’t like beets, or know someone who only thinks of beets as those pickled things on the salad bar, we have meal ideas this week that will blow those perceptions away!
The Roasted Beet Hummus has so much flavor we have been told “I didn’t think I liked hummus, but this is fantastic!”, and “I had no idea beets could taste like that!” Try this recipe or the Roasted Beet Orzo Salad to see if you become a beet-believer!
As we head into summer and our holiday weekend, get your grill on and enjoy the Grilled Sriracha Meatballs — eat them by themselves or turn them into mini sliders. Or, grill the chicken for the Chicken Shawarma…both of these meals are absolutely delicious! You can kick off this meal with fresh in-season Strawberry Gazpacho, which is a great-tasting soup…served cold and perfect for summer! Plus, it is a great way to celebrate May as National Strawberry Month and National Gazpacho Aficionado Month (you knew that, right?).
