Typical Wichita style…hello June and hello Summer! To celebrate this launch into hot and humid, this week’s meal ideas include a few things to enjoy on the grill, plus a few more that are quick, easy, and light! The basil in the Caprese Burger adds fantastic flavor and the Hawaiian Fajitas are delicious hot off the grill! The Cobb Salad includes a delicious homemade Green Goddess dressing and the Cilantro Lime Hummus is perfect to enjoy while you relax and wait for the Swiss Chard and Black Bean Enchiladas to bake! (With a glass of wine recommended by Beyond Napa of course!). If you have never roasted beets, this one is a winner — the Orzo Salad with Roasted Beets, Blue Cheese and Walnuts — YUM! And, definitely worth mentioning is the Spaghetti Salad with Sausage, Tomatoes, Olives and Basil Vinaigrette! I recently took this to a gathering with friends and it was a hit!
