Since most of us don’t have the opportunity to travel around the world, we try to bring a variety of ethnic dishes and ideas to our Eat REAL America members to help keep it interesting! In this week’s meal ideas, we have included a Borscht Stew that comes from Eastern and Central Europe. This Ukrainian stew is made with beets (yes, you heard right!), and it’s absolutely delicious! Plus, the slow cooker does the work!
Many of the other ideas this week are ideal for busy weeknights — they come together quickly and taste great! The flavor combination of the Chile Lime Salmon Fajita Salad is incredible! It goes perfectly with the Avocado Hummus. The Black Bean Quesadillas are an Eat REAL America member favorite and the Broccoli Parmesan Pasta is so easy and would work with any type of your favorite pasta…or try it with spaghetti squash!
Just in case you need a little boost of mid-January good luck, the Black Eyed Pea Salad is a nice change of pace!
