Fat Tuesday is next Tuesday, February 28th! Since most of us probably can’t squeeze in a trip to New Orleans to celebrate Mardi Gras, don’t we owe it to ourselves to at least EAT Mardi Gras style? You will see that several of the meal ideas this week are New Orleans-inspired.
The Red Beans and Rice and Cajun Chicken Pasta are both incredibly delicious and will help get you in the Mardi Gras mood!
Of course, if Tuesday is Fat Tuesday, the next day is Ash Wednesday, which means the beginning of Lent. So, we have also included some great-tasting “no meat” meal ideas this week. The Asian Salmon Cakes are full of flavor and we have been told the Portobello Philly Cheesesteak is “so good, my family didn’t even realize there was no meat!”
For those celebrating the season of Lent, we will provide at least one fish or seafood recipe the next few weeks and, of course, vegetarian options too. If you are looking for a unique idea for Lent, what about a commitment to only eat REAL food?! Or, if you are already doing this, what about encouraging and family member or friend to join you?! It could be life-changing!
