Why We Like It

Pineapple salsa isn't just for summertime!  You will want to eat this salsa year-round, and you can!  A true winner alongside your favorite Mexican dish, it can also be served with tortilla chips, atop grilled chicken or fish, or eaten directly with a fork!  Feel free to add fresh mango or peaches in place of the pineapple...delicious!

Make the Salsa:

  • 1 fresh pineapple (peeled, cored and diced, about 4 cups)
  • 1/4 cup fresh cilantro (chopped)
  • 1 small red onion (finely chopped)
  • 1/2 to 1 jalapeno (or serrano pepper, seeds removed if desired, and finely chopped)
  • 1 Tbsp lime juice (juice from half of 1 lime)
  • 1/8 tsp salt

Add to a medium-sized bowl and stir to combine.

(This salsa is best when prepared 20-30 minutes before serving for the flavors to meld together.  Good luck waiting that long to eat it!)

Serve and Enjoy!

Serve as a side salad or with tortilla chips if desired.
