Could Spring be around the corner?! It certainly feels like it in many parts of the country today! In a few weeks, we will start our transition into Spring-like meal ideas (to help treat our Spring fever!), but we will continue to provide a few more ideas to hang onto those winter veggies a little longer.
A few of the meal ideas this week have a “breakfast for dinner” theme…or, of course, they would be fantastic for breakfast too. The Sweet Potato Stuffed Mushrooms, the Baked Pineapple Oatmeal and the Kedgeree Rice Bowl would all be fantastic for either breakfast or dinner. Plus, they are perfect for those celebrating the season of Lent.
The Jambalaya Lentil Bowl is an easy and great-tasting meal that gets rave reviews! You could even substitute shrimp if you are looking for a meat-free meal. Make the Slow Cooker Beef Brisket, and then the leftovers turn into a fantastic Brisket Chili that is ideal for those busy weeknights.
