We always want summer to keep going with all of the incredibly delicious fruits and vegetables, but then as September gets closer, we start looking forward to fall meals…winter squash, soups, one-pot Oktoberfest…but wait! We are getting ahead of ourselves…we are still trying to squeeze as much out of summer as possible!
We have some big-time hits this week that went over REALLY well with all of our taste-testers — the Panko Crusted Mustard Salmon is so incredibly easy and has phenomenal flavor and crunch! The Grilled Green Beans are also fantastic — yes, you can even grill green beans! The seasoning mix is crazy good and made these green beans disappear quick…a far cry from green beans out of a can!
While they are still in-season, we will keep the Hatch Chile ideas coming for at least the next week or two…the Chicken Burrito Bowl with Hatch Chile Pico de Gallo is ideal for a busy weeknight. Plus, the Edamame Tomato Basil Salad, Pasta Puttanesca, and Roasted Potato and Okra Salad will let you take advantage of fresh ingredients from the farmers’ market and, of course, keep your August Superfood Challenge going. Congratulations to all of you who completed the Superfood Challenge by enjoying okra in different ways throughout August!
