Week of April 4, 2016 - Weekly Meal Ideas


If you are like us, you are getting very anxious for Spring and Summer and all of the fresh in-season foods and flavors!  Be on the lookout…farmers’ markets will be opening soon — and we can’t wait!

As we celebrate our April Superfood of the Month, we have included some ideas to help you incorporate asparagus into your meals this week!  The Potato and Asparagus Salad with Olive Vinaigrette is an impressive and zesty side dish with great flavor.  And, the Shaved Asparagus Pizza will surprise you — it’s crazy good!

At a recent Eat REAL America event, one of the participants brought the One-Pot Moroccan Vegetable Curry and we were hooked — it has mind-blowing flavor and is now one of our favorite curry dishes!  We love featuring member-inspired meal ideas on Eat REAL America!

Keep it easy this week with the Slow Cooker Carnitas Tacos that work perfectly with the Southwestern Coleslaw.  Plus, the Tropical Seafood Spring Rolls will get dinner ready in a snap — you could even add asparagus to the rolls!

Don’t forget about April Fool’s Day tomorrow!  Why not use this as an opportunity to surprise your family or friends with foods they never knew they liked!  Try Parsnip Fries or Roasted Beet Hummus, but don’t tell them they are made from parsnips or beets until they are done raving about how good they are!
