Week of September 5, 2016 - Weekly Meal Ideas


As we all celebrate Labor Day this weekend, we hope you have a chance to slow down and enjoy time with family and friends!  And, of course, with the meal ideas this week, we will keep you eating happy (and healthy)!

If you are serving a small crowd, you can fire up the grill and serve the Caprese Burgers and Grilled Zucchini, Leeks and Corn — they both will definitely impress your guests — and you can serve the Bruschetta Pizza with fresh, flavor-popping, in-season ingredients while they wait!

If you’re like us, our evening schedules get absolutely crazy after Labor Day.  So, if you just need something easy on one of those hectic weeknights, the Cashew Chicken with Bok Choy is a great choice…and it will keep you on track for the September Superfood Challenge!

If you’re hitting the farmers’ market, here are some items to consider for your shopping list for this week’s meal ideas:  zucchini, leeks, basil, pattypan squash, okra, tomatoes, radishes, cucumber, cantaloupe…plus your favorite local meats, greens and breads!

With your fresh, in-season ingredients, it will be super-easy to prepare the Baked Pattypan Squash Parmesan, Curried Okra & Tomatoes and the Grilled Scallops with Summer Melon Salsa (which is also great using shrimp or your favorite white fish) — these are all delicious!
