Have you ever wondered what those strange things are in the produce section that look like green tomatoes, but are surrounded by a papery husk? They are tomatillos and they make incredibly delicious salsas — especially when you roast them. We have included it this week for you to give it a try!
In the spirit of our coaching tip from Tuesday on 2-for-1 meals, we want to help you keep it simple this week. You can make the Easy Slow Cooker Pulled Pork, and then transform it into the Carnitas Taco Pizza — both are fantastic and the whole family loved them!
The Grilled Mozzarella Sandwich pops with flavor using fresh, in-season tomatoes, along with a tomato jam topping. Plus, if you love Huevos Rancheros like we do, you will love the Huevos Rancheros Salad! Both of these meals will keep your taste buds happy this week!
To help keep your September Superfood Challenge going (and to help you celebrate National Rice Month), we have included a crazy good way to enjoy bok choy…in the Wild Rice with Bok Choy (we made it twice last week…it was THAT good!). We encourage making a batch of rice over the weekend, and then you can whip this delicious meal out on a busy weeknight…and even eat the leftovers for breakfast the next morning!
