Fall doesn’t officially begin until September 22, but we are ready!
Not sure what we are more excited about…the cool weather (and, of course, football!) or all of the seasonal food and flavors that autumn brings! Pears, apples, acorn and butternut squash, cauliflower, a resurgence of greens…just to name a few! This week, we are easing into fall with the Apple Kale Millet with Spicy Shrimp and Bacon — it’s absolutely delicious! Feel free to use your favorite whole grain such as quinoa, couscous, rice or farro.
This week’s ideas will also help use up that end of summer produce such as zucchini, summer squash, tomatoes and garlic. Speaking of garlic, don’t let the Garlic Loaded Chicken intimidate you…it calls for a lot of garlic, but it is loaded with LOTS of flavor! And, the Mexican Style Zucchini is a perfect way to jazz up this veggie that always seems to be plentiful right now!
The Roasted Cauliflower Pasta is a fantastic way to transform our September Superfood of the Month into a delicious meal you will want to make over and over again — try it and see what you think! To accompany the pasta, the Kale, Clementine & Feta Salad or the Cranberry Orange Muffins would both be great options. And, if you make the muffins, you can enjoy the leftovers for a quick and easy breakfast the next morning.
