Do you love 2-for-1 meals?  If you have a hectic week, the Slow Cooker Balsamic Pork Tenderloin & Veggie Stuffed Sweet Potatoes are ideal – you can even cook the sweet potatoes in the slow cooker with the pork.  Then use the “planned overs” for the Encore Balsamic Pork & Pepper Quesadillas (even picky eaters will love these)!

The Grilled Veggie & Tortellini Salad is a flavorful and filling meal.  It would go great with the Radicchio Romaine Pear Salad – the radicchio adds a nice touch, but the salad is also excellent without it (or substitute other greens like arugula for the radicchio).

The Brunch Inspired Sheet Pan Salmon allows you to roast everything on one pan, making cleanup super-easy!  And the Pear Tartines would be an ideal side – especially if you can get pears like the ones we have enjoyed from the farmers’ market the past couple of weeks.

The Quinoa Corn Chowder is delicious, quick and easy — and perfect for the transition from summer to fall.  You don’t even have to cook the quinoa beforehand…just add it to the chowder and the quinoa cooks while it simmers!
