As we continue to transition from summer to fall, we are trying to stretch the last of the summer produce while we are starting to crave all of the great harvest this next season has to offer!
So, this week’s meal ideas are intended to help you enjoy both! Use summer’s fresh zucchini for the Zucchini Muffins, Crazy Cajun Quinoa and the Green Beans & Zucchini with “Green Sauce.” Pick up some fresh okra and tomatoes for the Okra and Tomato Salad, and any fresh basil that is still holding on is perfect for the Spinach Artichoke Pesto Pizza.
