Week of September 13, 2021 - Weekly Meal Ideas


We know fall doesn’t officially start for a couple more weeks, but maybe you are like us and starting to crave autumn-inspired meals (or, maybe we are all just craving cooler weather?!).  Plus, some of the seasonal foods and flavors autumn brings are starting to show up at the farmers’ markets.  So, we are easing into the transition from summer to fall!

Continue to enjoy the summer flavors of zucchini, tomatoes and basil in the Zucchini Fettuccine Alfredo, and the Eggplant Tomato Salsa is absolutely delicious with in-season ingredients.  The Green Beans & Zucchini with “Green Sauce” is popping with flavor right now — this French-inspired sauce is a perfect way to jazz up your veggies!

To ease us into fall, the Chicken, Kale & Apple Salad with Pecans and Feta is crazy good.  And, the Butternut Squash Veggie Bake is an ideal way to combine the flavors of fall and summer with ingredients like butternut squash, peppers, tomatoes and corn.  It is excellent with tortillas, in a wrap or all by itself!

For delicious meals on those busy weeknights, let your slow cooker do the work to produce pork that is tender, falling apart and perfect for the Carnitas Tacos.  Then, quickly and easily transform the leftovers into the Carnitas Taco Pizza…everyone will love it!

For those in the mood for a little pumpkin spice, Pumpkin Spice Granola is a delicious way to satisfy your craving.  Serve it with yogurt or milk, or enjoy it all by itself!  It’s great for breakfast, and is easy to take with you for a great snack, either at home or away from home.
