The official start of fall is still two weeks away, but we are ready for cooler weather, tailgating and football games, plus all of the seasonal foods and flavors that autumn brings! Pears, apples, acorn and butternut squash, cauliflower, a resurgence of greens…just to name a few! This week, we are easing into fall with the Chicken, Kale & Apple Salad and the Pumpkin Spice Granola (because we know many of you just can’t resist the urge for pumpkin spiced something!)
This week’s ideas will also help you enjoy end of summer produce including eggplant, tomatoes, corn on the cob, hatch chiles, peaches, and garlic. The Hatch Peach Salsa would be a great side with the Slow Cooker Brisket Tacos. And those juicy cherry tomatoes are perfect in the Mushroom Tomato Basil Bruschetta and the Sweet Potato Kale Frittata!
We are a little embarrassed to admit we have never included a quick and easy, homemade chile oil in our recipes (how can that be?!). We have now added the Crispy Eggplant & Corn with Chile Oil – and the combination of flavors and textures is absolutely delicious! It would go great with the Guinness-Marinated Bison Steak Sandwiches!
