Fall doesn’t officially begin until September 23, but we are ready!
This week’s ideas will help you continue to enjoy the end of summer flavors while getting your taste buds ready for fall. The No Mess Rustic Chicken all bakes in one pan and has a great combination of summer and fall veggies. It would go great with the Cabbage & Summer Squash Pear Salad (get fresh, local pears if you can!).
Fire up the grill and enjoy the Grilled Chipotle Fish Tacos with Peach Salsa and the Blackened Okra with Red Rice (a delicious way to enjoy the end of summer okra). And if the heat is still going strong where you are, an ideal refreshing meal would be the Roasted Eggplant Bruschetta and the Zucchini & Basil Soup (fantastic warm or cold and a perfect way to use up zucchini and basil).
We served the Moroccan Spaghetti Squash at a farmers’ market demo a couple of weeks ago and everyone loved it! It comes together quick and easy, as does the Ground Beef & Spinach Skillet (another simple one skillet meal loaded with flavor). Have a wonderful week!
