This week, we are continuing the fall-inspired meal ideas!  Get your hands on some sweet potatoes and enjoy the Sweet Potato Hash with EOT (Egg on Top)…if is perfect for breakfast or a quick and easy dinner.  Plus, the Brussels Sprouts Salad with Creamy Dijon Dressing is an ideal side dish for just about any meal, and you might consider this a test run as a salad to take to an upcoming family or holiday gathering!  And, the Thai-Inspired Autumn Hummus is a great way to keep pumpkin in your fall routine.

We recently had a member request for eggplant pizzas, and we are so thankful because we think everyone is going to love the Mini Eggplant Pizzas!  Thanks to the Panko breadcrumbs, they have a fantastic crunch, and the flavor is spectacular!  We made these twice in one week because they left us wanting more!  We hope you give them a try…a unique and fun way to celebrate National Pizza Month in October!

If you like the Zuppa Toscana soup at Olive Garden, you will love the Sausage, Potato & Kale Soup.  Plus, the Oven Roasted Salmon Over Creamy Green Beans is loaded with flavor and tastes like something that would come from a fancy restaurant (and it is super-easy to prepare!).
