A couple of our favorite things about fall…root vegetables and winter squash! Sweet potatoes are especially good this time of year and butternut, acorn and delicata are a few of our favorite varieties of squash! This week’s meal ideas include some incredibly delicious ideas what to do with these in-season ingredients! The Spicy Peanut Sweet Potato Soup is perfect for fall and combines both sweet potatoes and butternut squash for a delicious flavor. The Maple Garlic Roasted Squash is great anytime, and would be a great option for your holiday dinner table. Try it and see what you think – you can also use acorn squash!
