Week of November 2, 2020 - Weekly Meal Ideas


This is a big weekend!  Halloween, the transition from October to November, plus we get an extra hour of sleep!

If you are looking for a last minute Halloween meal idea, the Slow Cooker Autumn Pork Tacos would be ideal.  The slow cooker does most of the work and they practically cook themselves.  Plus, you can make it more fun by spiralizing the apples for the topping — the kids will love it!  Then, since two-for-one is always a great thing, you can use the leftover pork and enjoy the Irish Pork and Fruit Curry.

Or, if you are in the mood for some southwest flavors, the Southwest Quinoa with Simple Guacamole is a delicious, quick and easy one-pot meal!

If you are looking for something hearty this week, we hope you will try the Cincinnati-Style Chili!  It seems so simple, yet it’s incredibly good and loaded with flavor!  This version will not disappoint and is perfect to serve over spaghetti squash!

We are also providing some great-tasting ideas to enjoy in-season ingredients like acorn squash, apples, Brussels sprouts and sweet potatoes.  If someone you know thinks they don’t like Brussels sprouts, the Kung Pao Brussels Sprouts just might change their mind!  Plus, the Acorn Squash & Apple Salad and the Sweet Potato & Poblano Salad are both versatile sides and have excellent sweet-spicy flavors!
