Springtime meets Cinco de Mayo in the meal ideas this week!
Did you know? Cinco de Mayo is a celebration of Mexican culture and heritage and is celebrated primarily in the U.S. In 1862, Mexico won the Battle of Puebla against France. The reason this is a big deal is because France sent a huge army to invade Mexico and, although the Mexicans were the underdog, they won the battle and this unlikely victory is celebrated every 5th of May. Many believe Cinco de Mayo is Mexico’s Independence Day, but that day is actually celebrated on September 16th, which is a much more important holiday in Mexico!
To get you in the mood to celebrate, we have included several delicious ideas including the Hawaiian Fajitas and Mexican Veggie Loaded Tacos! And, to add some spring flair to your Mexican theme, try the Swiss Chard & Black Bean Enchiladas — they include two fantastic in-season ingredients – Swiss chard and rhubarb – and taste amazing!
