As many celebrate Cinco De Mayo next week, we have included several meal ideas for you to enjoy with a Mexican theme! Obviously many of us know that Cinco de Mayo is the 5th of May, but what is its significance? It’s a celebration of Mexican culture and heritage and is celebrated primarily in the U.S. In 1862, Mexico won the Battle of Puebla against France. The reason this is a big deal is because France sent a huge army to invade Mexico and, although the Mexicans were the underdog, they won the battle and this unlikely victory is celebrated every 5th of May. Many believe Cinco de Mayo is Mexico’s Independence Day, but actually that day is celebrated on September 16, which is a much more important holiday in Mexico!
To get you in the mood to celebrate Mexican style, we have included the Slow Cooker Carne Asada Steak, which will give you incredibly good, falling-apart steak to turn into tacos, nachos, lettuce wraps, stuffed sweet potatoes…you name it! Then, the Mexican Beans with Avocado are a perfect match to enjoy with the steak! The Chicken Enchilada Skillet is a member favorite because not only is it delicious, but it is super-easy…everything cooks in one pan! When you are ready for other options, the Simple Citrus Quinoa Bowl, Middle Eastern Nachos, and Cod and Pasta Ratatouille won’t disappoint! The Cod and Pasta Ratatouille is especially good prepared on the grill using fresh produce from the farmers’ market!
