Week of May 27, 2019 - Weekly Meal Ideas


This Saturday is National Wine Day!  (As if we really need an official day to enjoy wine!) And, you are in luck — any of the meals in this week’s meal ideas would pair fantastically with a good glass of vino!

Since this weekend marks the start of summer, we have included several ideas this week that are light, easy and make great use of in-season ingredients from your local farmers’ market!  Plus, several are perfect for the grill!

The Egg and Mushroom Sandwich with Basil Pesto and the Cod with Caramelized Fennel will keep things quick, easy and delicious!  The Feta Stuffed Lamb Burgers and Pineapple Mojito Chicken Bowls are ideal for the grill…yes, you can even grill the pineapple!  Crazy good!

The Surprise Spaghetti Bolognese is a must-try — you won’t believe that there is no meat in this one (mushrooms and walnuts make up the “meat”)!  It’s absolutely delicious and a hit with the whole family (see if family members can guess the surprise…after they have eaten it!)   Just another example of how delicious a few REAL ingredients, simply prepared, can be!
