Springtime meets Cinco de Mayo in the meal ideas this week!

Did you know?  Cinco de Mayo is a celebration of Mexican culture and heritage and is celebrated primarily in the U.S.  In 1862, Mexico won the Battle of Puebla against France.  The reason this is a big deal is because France sent a huge army to invade Mexico and, although the Mexicans were the underdog, they won the battle and this unlikely victory is celebrated every 5th of May.  Many believe Cinco de Mayo is Mexico’s Independence Day, but that day is actually celebrated on September 16th, which is a much more important holiday in Mexico!

To get you in the mood to celebrate, we have included several delicious ideas including the Sweet Potato Burrito Bowl, which is ideal with the Simple Guacamole.  We think you will love the Mexican Sloppy Joes and the Mexican Breakfast Pizzas (these pizzas would also be a great Mother’s Day breakfast!).  And, to add a little spring flair to your Mexican theme, try the Spanish Veggie Scramble — it’s a Spanish-inspired scramble made with sausage, leeks, asparagus and mushrooms, and it tastes fantastic!  Plus, it would be perfect served with the Tropical Spiced Fruit Salad.

If you are a fan of mojitos, check out the Pineapple Mojito Bowls. We have made these with both chicken and fish (cod) and they were delicious both ways.

Make the most of your locally-grown produce this week!  In many parts of the country, produce is beginning to show up at the farmers’ markets — it’s a great time for asparagus, carrots, green onions, radishes, greens, strawberries and so much more!
