Week of May 1, 2023 - Weekly Meal Ideas


While spring is in full bloom, we are taking full advantage of fresh in-season asparagus, radishes, green onions, strawberries, and so much more!  The meal ideas this week scream “Springtime Flavor!”

The Cilantro Lime Pork Tenderloin is an excellent reason to get your grill on, and then the leftovers are easily transformed into the explosion of flavors in the Tropical Pork Cuban Sandwiches!

The Strawberry Tabbouleh is light, refreshing, and ideal for spring.  And to make the most of asparagus season, make sure to enjoy the Spring Vegetable Orzo Pasta Salad and the Asparagus & Radishes with Mint (which would be an ideal side for the Moroccan Spice Lamb Pizza)!

To add a little spring flair to your Cinco de Mayo celebration, try the Spanish Veggie Scramble — it’s a Spanish inspired scramble made with sausage, leeks, asparagus and mushrooms, and it tastes fantastic!  It would go great with the Mexican Beans with Avocado.
