It is 80 degrees in the midwest right now! Does that mean spring is here?! Our outdoor farmers’ market opens this Saturday, so we must be getting close and we are super-excited!
Next week, we will load you up with St. Patrick’s Day inspiration and, as a teaser, we have included the Deconstructed Cabbage Rolls in this week’s meal ideas. They are much easier than traditional cabbage rolls, have phenomenal flavor, and would go great with the Seasoned Sauteed Mushrooms.
For some crazy-good meatless meals, make sure to enjoy the Butternut and Black Bean Enchilada Skillet…a vegetarian, one-pot meal that is incredibly tasty! You can serve it with the Mexican Pineapple Salad for a perfect meal to transition from winter to spring. For a couple of quick and easy meals, the Peanut Cabbage Stir Fry and the Tuna Lettuce Wraps are both so easy to prepare and the lettuce wraps have an amazing horseradish dressing!
The Fire Roasted Tuscan Style Chicken is another one-pot meal that tastes like it cooked all day and came from a restaurant. It’s delicious served with the Muffuletta-Inspired Vegetable Salad (just in case you didn’t get enough New Orleans cuisine this past week).
