Week of June 8, 2015 - Weekly Meal Ideas


It’s summer…and it’s strawberry season!  You can definitely tell in this week’s meal ideas!  Strawberries have such a short growing season, we wanted to give you several fantastic ways to enjoy them while you can!  The Roasted Beet and Mixed Berry Salad is incredibly good and the poppy seed dressing really brings out the flavors!

Ever wondered what to do with rhubarb?  The Strawberry Rhubarb Crumble is a delicious indulgence!  And, for another great way to use fresh strawberries, you can make a guacamole with avocadoes, strawberries and goat cheese…the flavor is unbelievably good!

Another farmer’s market find, collard greens, inspired the Sweet Potato Collard Green Wraps and they are our favorite this week – the honey mustard cashew cream is crazy good!  For some especially quick and easy meals, try the Slow Cooker Marinara Sauce, Farmer’s Market Fish Packet and Tropical Pork Cuban Sandwich (just in case you need another reason to make the Jamaican Jerk Pork Tenderloin from last week!).  We made the Cuban sandwich three times in the past week — it is THAT good…and THAT easy!
