June is National Fruit and Vegetables Month!  We want to help you kick it off with a bang with fresh, in-season fruits and veggies like Swiss chard, kohlrabi, carrots, cucumbers, garlic, blueberries, basil, mint and more!

You can use either the grill or the oven for the Pesto Panko Crusted Trout (or use your favorite fish) and the Goat Cheese Chicken with Blueberry Salsa.  You can also use your leftover goat cheese for the quick and easy Black Bean Quesadillas!

We have seen some amazing Swiss chard at the farmers’ markets in the past week – perfect for the Goat Cheese Chicken and the Swiss Chard with Raisins & Nuts.  And the kohlrabi is looking great too – transform this cancer-fighting veggie into the Chile Kohlrabi Fries!

If you are looking for a meal that you can enjoy throughout the week, check out the Mini Italian Meatloaves.  They are excellent for lunches throughout the week, and they even freeze beautifully!  And for something to help beat the heat, the Chilled Noodle Summer Salad is light and refreshing as the temperatures heat up, and the Peanut Butter Turtle Parfait is a delicious summer sweet treat with peanut butter caramel flavors!
