Tomatoes, cantaloupe, okra, zucchini, peaches, eggplant, cucumbers, Hatch chilies, basil, mint…OH MY! This week’s meal ideas are loaded with ideas for all these amazing in-season ingredients!
Now that August has arrived, it’s Hatch Chile time! The soil and growing conditions in Hatch Valley contribute to the unique flavor of the chilies grown there. Hatch Valley is at 4,000 foot elevation, so it gets hot during the day, and then cools off at night. This hot to cool condition gives the chilies a unique taste compared to peppers from other parts of New Mexico. We will provide some delicious ideas the next few weeks, starting this week with the Hatch Peach Salsa…you should probably go ahead a double the recipe because it will disappear quick!
You can also use Hatch chilies, along with freshly harvested okra and tomatoes, in the Okra Curry!
