Welcome to August – we hope you are continuing to savor the amazing flavors of summer! And we hope this week’s meal ideas will help keep things interesting and inspiring!
Celebrate National Farmers’ Market week next week and pick up the ingredients for the refreshing and flavorful Watermelon Tomato Gazpacho (it will help keep you cool in these brutally hot temperatures). And fill your bags with tomatoes, cucumbers, red onions, garlic, basil, and summer squash to enjoy the Chicken Shawarma, the Parmesan Panko Tomatoes, and the Grilled Summer Squash & Nectarines. The flavors of summer will come shining through in these meals!
And it doesn’t stop there! Shishito Peppers are in full force right now. Cook them for a few minutes in a dry skillet until they are blistered, add a little olive oil and salt, and enjoy the melt-in-your mouth goodness! Plus, okra is coming on strong and the Bhindi (Okra) Curry is both delicious and nutritious.
One of our absolutely favorite meals with freshly harvested summer cherry tomatoes is the Take Me to Italy Tomato & Garlic Pasta – it is SO GOOD! And if you have summer peaches hanging around, fire up the grill and enjoy the Grilled Peach Burgers!
